I think the church would be to controversial due to the nature of religious groups feeling they may not be represented in a set, so I would assume they would not make a church building unless there were one for all of the major religions. also i think a museum would be a cool addition.

As such, the only things that truly make a specific Lego set for adults is the complexity of the set and the likelihood that an adult will be properly engaged through playing with it. While many adults choose to play with only challenging Lego sets; others will buy sets simply because they enjoy the theme, regardless of the skill level involved in the undertaking.
Over the holidays, my niece got a larger Friends LEGO set and I helped her put it together (it had around 1200 pieces!). I was once again bitten by the LEGO bug. I hadn’t played with LEGO’s for nearly 20 years but I had to! I looked around LEGO’s website to see what kinds of sets were available – I had seen all the movie sets and what not already in the stores, but wanted something more interesting… Saw these Creator sets and I just had to have them. I ended up getting the 4 that are currently available (Town Hall, Pet Shop, Fire Brigade & Grand Emporium). Too bad the other 2/3 are valued so highly and cost around $1000 each (too rich for my pockets!) but I am looking forward to the Chinese Theatre that will be coming out sometime this year. I wish they made more than 1 of these each year! This set took me about 6-7 hours to complete and it is magnificent! I did a time lapse photo shoot of it as well (which may have increased my build time a little). I’ve completed 3 out the 4 sets I’ve purchased and they are some of the best looking sets I’ve seen and truly had a blast putting them together. One the best parts about these buildings is that they are designed to be connected together to make a street out of them. Can’t wait to get more LEGO sets to build in the future.
I suspect this ultimately still boils down to what I said in my first post. If it’s harder to produce but people are not willing to pay more money for it, what’s the point? I find myself as well being not terribly interested in the Technic figures, while I love Technic. Yet I do like minifigs. But it feels like the figures are just not needed in the models.
In 2006, a poll was taken, aimed at the AFOL community. Adult fans were asked to share their ideas and opinions of what concept they would like to see for a future model from The LEGO Group. It’d be hard to argue against Lego’s Star Wars Collector’s Millennium Falcon as being one of the most challenging and largest Lego sets (it also probably ranks as our #1 LEGOs for adults). The $499 Millennium Falcon is suggested for ages 16-years and older but younger kids can probably get through it with some supervision. The highly detailed scale model is made up of a whopping 5,195 pieces but only 5 mini-figures including Luke, Princess Leia, Han, Chewbacca, and a stormtrooper. Why the set doesn’t include C-3PO and R2-D2 mini-figures is sort of a mystery (weren’t they on the Falcon during the mission to rescue Leia?), but nevertheless the ship itself is more than enough to focus on. The Collector’s Millennium Falcon was released in 2007 and retired in 2010, but remains the most-expensive mass-produced Lego set to date.

At the same time #10218 LEGO Creator Pet Shop is shown as backordered with an expected ship date on the 20th. This set you can actually order online, and it will be shipped to you once it becomes available (in my experience usually much before the expected ship date). This set is not yet close to being retired, however if you want it for Christmas, I would suggest you get it now. A lot of LEGO fans shop for the LEGO Modular Buildings around this time of the year (both because of the Double VIP Points Period and also because people tend to buy larger sets for the holidays), causing the most desirable sets to be perpetually out of stock.

They don’t always discontinue them– the best example I can think of is probably the Star Destroyer, which was around longer than LEGO initially expected, thanks to excellent sales. They offered it in catalogs from at least 2002 to 2007 (6 years). If they offered the UCS MF that long, it would be in catalogs until at least 2012!
I remember buying a 386 Ambulance Helicopter set back in the 1970s… only because it had 2 45 degree white concave corner slopes. Then over 30 years later these same parts were reintroduced in the Shrieking Shack Harry Potter Set.
